During my years in Downtown Los Angeles, I lived a block over from the glitz and glamour of the DTLA skyline. My neighborhood was predominantly from Mexico which meant the most local and authentic food at my fingertips.

The location of my apartment was unique: close proximity of incredible restaurants, luxury nightlife and free parking which saved $100 on an evening out. My loft was always the spot people would come to pre-party (and park) as well as the studio location for my cooking shows.

During this time, I began to explore all the mom & pop eating establishments. It was a masterclass in the cuisines of Mexico: the favorites like tacos, enchiladas, quesadilla and even tequila … had completely different flavor profiles depending on whether they were from Baja, Yucatan, Veracruz … or Oaxaca.

Oaxacan food was my favorite: rich thick sauces made from smoked chili, coffee and dark chocolates. Grilled cactus salad with their traditional quesillo (translated as “rope cheese”) and shots of Mezcal; a specialty smoked tequila exclusive to the region. Breakfast scenes were usually plantain tamales with mole and micheladas, beer served with lime and a spicy tomato juice.

Over time, friends would come to Downtown to visit but instead of checking out the hottest new restaurants, we would stop by our favorite oaxacan food trucks and stalls.

This culinary experience is the unique flavors of central Mexico with a fresh, California twist. It’s one of my personal favorite meals and close to the heart, as these recipes are rare outside of Mexico and Downtown Los Angeles.
