My name is Mariko, and I’m a chocolate addict. Here is a fast and simple recipe that you can indulge in without the guilt. It’s also gluten-free, vegan … and apple sauce replaces the oil for fat free awesomeness. A friend wanted to introduce me to one of his friends, and mentioned she was gluten-free. I decided to whip up an assortments of these delicious cakes (at midnight) to bring to my morning meeting. Long story short – the cupcakes were a hit … and I look forward to baking awesome deserts for my awesome new friends.

Gluten-Free and Vegan Chocolate Cake

A perfect chocolate cake with a million variations. Adapted from the Moosewood classic, my version is vegan, gluten-free and virtually fat free. Try customizing with different flavors such as raspberry, coconut
  • 3 cups gluten-free flour mix
  • 2/3 cups cocoa powder, unsweetened
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 cup applesauce
  • 2 cups cold water or coffee
  • 2 tablespoons vanilla
  • 4 tablespoons vinegar
  1. Preheat oven to 375 degrees. Mix all dry ingredients together. Add all wet ingredients except vinegar and mix well. Add vinegar, stir and pour into (2) 9 inch pan or cupcake molds.
  2. When cool … get creative for your garnish. I like melting chocolate chips in the microwave to use as a ganache. Try filling with raspberry jam or a sprinkle of coconut and nuts. Enjoy!
  3. Bake 20-25 minutes, until done.
