I love Fennel! It has a sweet and spicy and crunchy texture that is great raw and cooked! It has many health benefits; great for digestion, promotes eye health and increases libido! Fennel is often associated with Italian cooking, and I asked my Grandma if her family used it much growing up. Her response was “We never used Fennel … probably because we were Toscane and it wasn’t a common ingredient for us. I don’t like fennel in sausage , but Anise (fennel seeds) are delicious in cookies and sweet breads.”
Regardless if you are Toscane or not, try this easy salad recipe. Its fast and healthy and delicious!!!
